Biotechnological utilization of whey waste for lactic acid production

Abstract (EN)
In this research, possibilities of using whey for lac tic acid production was investigated. Fourteen lactic acid bacteria were inoculated to four different whey medium and the amount of lactic acid produced in these medium were calculuted. Acid production were increased with the incre asing additionul compounds. Highest acid production were estimated in Lactobacillus bulgaricus925 and Lactobacillus leichmannii76B.Both cultures in the medium number 4 were produced 10 g/100 ml lactic acid. Lowest acid production was calculated in Streptoccoccus thermophi lus culutres. Result also showed, that speices and straim of Lactobacil lus were higher acid production than the Streptococcus bacteria.
