Investigation of biofilm-forming bacteria in food supplied for consumption on sales stalls in aydin province

Abstract (EN)

Nutrition is a very important element for humans as in all living things. Foods used in nutrition provide metabolic activities and create energy. In some cases, microbial growth in foods can have adverse effects on humans. Especially the growth of biofilm-forming bacteria on foods can pose a health hazard. For this reason, food hygiene and safety is important at every stage from the production to consumption of food.. A total of 80 bacteria isolates were obtained in the study. 67 bacteria identification was made from these isolates. As a result of qualitative analysis, it was determined that 9 bacteria formed biofilms. In quantitative analysis, Enterococcus faecalis strain 2623, Bacillus cereus strain PJA1.5, Citrobacter freundii strain E2WCTM1, Staphylococcus epidermidis strain 3039, Bacillus cereus strain TBMAX51, Pantoea conspicua strain B6 and Enterococcus faecium strain 4525 bacteria were strong adrehan, while Enterococcus gallinarum strain CCFM8325 and Enterococcus faecium strain CAU1957 showed adrehan characteristics.
