Abstract (EN)

Great attention has been paid to edible medicinal plants and fruits, which play an important role in human nutrition and have been used in the treatment of diseases since ancient times. There is no information about the bioactive components of the hawthorn fruit grown and consumed in the province of Elazig. For this reason, in this thesis study, chemical and bioactive characterization of the fleshy part of hawthorn (Crataegus monogyna L.) fruit collected in different locations in Elazig was carried out. Chemical characterization of fatty acids was determined by gas chromatography, DEK vitamins were determined by HPLC, phenolics and flavonoids were determined by spectrophotometric techniques. Bioactivity was evaluated by screening for antioxidant properties (free radical scavenging activity -DPPH). From the data obtained, it has been concluded that the hawthorn fruit grown in Ağın region has higher values in terms of bioactive components (Fatty acids, D, E, K Vitamins) and antioxidant properties and should be consumed and evaluated as a healthy food source.
