Due to the intense interest in natural herbal products that can be used for therapeutic purposes as antioxidants and antimicrobials in recent years, a field of study has emerged about plants whose structures and benefits have not been fully elucidated. In this study, the antioxidant and antimicrobial activities of the plants were investigated. These plants are Kondar herb whose Latin name is Satureja spicigera (K.Koch) Boiss, which grows on the slopes of Artvin mountain, Casir herb whose Latin name is Prangos ferulacea (L.) Lindl which grows in Artvin Yusufeli and Kunitsa herb that a Balkan origin species of Yarrow Achillea millefolium grown in Sakarya. The plants were extracted with solvents of acetone, methanol, acetate and water, so that the antioxidant and antimicrobial activities were determined by different methods. In order to determine the types of plants that cause antioxidant capacity, all of the extracts will be analyzed with various methods which DPPH free redikal scavenging through the determination, total flavonoid content with aluminum nitrate method, total phenolic content with Folin Cioceltau reagent, copper (II) ion reducing antioxidant capacity determination (CUPRAC), determination of capacity reduction, Iron (II) ions chelating activity assay, and in support of with UV-vis spectroscopy. Antioxidant profile was made by HPLC (High Performance Liquid Chromatography). Antimicrobial activity was investigated in vitro against Bacillus cereus (SBT8), Escherichia coli (ATCC 25922), Staphylococcus aureus (ATCC 25923), Candida albicans strains of the extracts using disc diffusion method. The extraction solvent difference, the part of the plant studied and chemical structure are effected in obtaining phenolic compounds in the content of plants and, accordingly, reaching the maximum antioxidant activity. All plants showed antioxidant activity with all methods. There are 7 different antioxidant compounds were observed and spectrophotometric methods were supported in the study of phenolic substance profile by HPLC. it has also been determined that the solvents effective of the plants on microorganisms are water and ethyl acetate. When we compared the plants in general in terms of antimicrobial activity, we obtained the order of S. spicigera > A. millefolium > P. ferulacea herb in parallel with antioxidant activity. As a result, in this study, it was determined that the extracts obtained from S. spicigera, P. ferulacea and A. millefolium plants, which are accepted and used as medicinal plants among the public, showed both antioxidant and antimicrobial activity without any separation process.
