Abstract (EN)
Antioxidants play important roles like preventing the oxidative degradation and delaying action components. They can be classified of natural and synthetic. BHA and BHT are synthetic antioxidants that they are widely used in food industry. In this study, one analytical method was proposed to determine the BHA and BHT which is spectrophotometric method and acquired results were compared with HPLC method. A derivative spectrophotometric method is developed for quantitative analysiz without preseparation for chewing gums which include BHA and BHT together. And, it was applied at ? First White? gum. The BHA and BHT absorption peaks are overlapped. For this reason, BHA and BHT analysiz were not determined by using absorption values. In literature research, there is no a spectrophotometric method which two antioxidants are analyzed together. To develop the spectrophotometric method, BHA and BHT?s solutions were prepared in methanol. Then, the absorption spectra were taken and first derivative spectra measured of the solutions. The best spectra is ?first order derivative spectra? to measure these antioxidants together. The absorption peak of BHA was 292 nm, for BHT was 304 nm and first order derivative absorbance was ?0?. From this point, the quantity of each antioxidants was determined together without other as measuring the first order derivative absorbance values on these wavelenghts. Some calibration curve was formed by using 1D values on these concentration intervals of BHA in 20-100 3g/ml and BHT in 5-25 3g/ml. The equations of these curves were calculated by ?least squares method?. And, this developed method was applied for ?First White? gum sample. Standard addition method and HPLC method were also applied for sample. HPLC method was used to compare these values. For each antioxidants, some calibration curves were formed on standard interval concentration for BHA in 20-100 3g/ml and BHT in 5-25 3g/ml. The obtained results by these methods were statisticaly compared at 95% confidence level using t and F tests.There was no significant difference between the mean precisions. It has seen that results between which were had using Standard Curve 1 method and HPLC method average was not meanly different. This method can preferably use in laboratory for BHA determination in gum. Key Words: BHA, BHT, first order derivative spectroscopy, standart addition method, HPLC
