Abstract (EN)
In this study, it was aimed to investigate the changes in the biofilm production capacity of five Saccharomyces cerevisiae strains at different pH, temperature, salt, potassium sorbate and glycerine concentrations by tube method and 96 well plate method. For this purpose, the pH value of Malt Extract liquid medium was adjusted to 5,0 and 6,5. Following this process, NaCl (0%, 1,5%, 3,5%, 5% and 10%), potassium sorbate (100, 500, 1000 mg/L) and glycerine (1% and%5) of varying concentration separately were added. Subsequently, five Saccharomyces cerevisiae strains were inoculated into each medium and incubated for 24 hours to observe changes at 30 and 40°C. As a result, biofilm production was highest at 30°C, but a decrease in the amount of biofilm formation was found when the temperature reached 40°C. The increase in the amount of salt, potassium sorbate and glycerin has adversely affected the biofilm production capacity of Saccharomyces cerevisiae strains. It has been observed that the environmental conditions at which strains produce the highest biofilm are pH 5,0 and temperature 30°C. Although the pH values differed according to the strains in the biofilm formation, it did not cause significant changes in general.
