Comparison of ISO methods and TEMPO rapid test system for the determination of total aerobic mesophilic microorganisms and enterobacteriaceae counts in various poultry products

Abstract (EN)

In this study, at the 123 pieces of whole carcass and mechanically separated poultry meat products, the number of total aerobic bacteria and Enterobacteriaceae were compared to determine the number of classical and rapid test methods. According to this comparison, to determine the number of aerobic mesophilic bacteria ISO 4833:2003 classical method and TEMPO TVC rapid test methods and also to determine the number of Enterobacteriaceae ISO 21528-2:2004 classical method and TEMPO EB rapid test methods are tried at the same time. According to results of the study, the results of totaly 100 examples of counting the aerobic mesophilic bacteria and also 85 examples of counting the Enterobacteriaceae were evaluated statistically.When the classical and rapid testing methods to compare statistically, Office Excel 2007 (Microsoft, Redmond, ABD) is used and descriptive statistical tests, f-tests and t-tests are performed. Linear regression and Pearson correlation analysis was also performed by using the Minitab 16 software (Minitab Inc., State College, TX, USA)According to results of evaluation, it was designated that there are no statiscally differences between classic ISO 4833:2003 method and TEMPO TVC method for the accuracy of the results of the counting totaly aerobic mesophilik bacteria. Similarly, it was also designated that there are no statiscally differences between classic ISO 21528-2:2004 method and TEMPO EB method for the accuracy of the results of the counting Enterobacteriaceae.However, it was made inferences that at the analysis of total aerobic mesophilic bacteria and also Enterobacteriaceae counting with using the TEMPO rapid test system according to classic ISO methods, analyze costs, ease of operation and the risk of contamination was found to be significantly more advantageous because of the low.Key words: Poultry meat, classical method, rapid method, total aerobic bacteria counts, Enterobacteriaceae counts.
