Abstract (EN)
In this study, methanol, ethanol extracts of molasses were analysed. These extracts were studied for antioxcidant capacity. The antioxcidant capacity of these extracts were evaluated using different antioxidant tests, including reducing power, free radical scavenging, hydrogen peroxide scavenging, DPPH and ABTS radikal scavenging, deoxyribose assay and β-Carotene bleaching assay. The content of total phenolic compounds in the methanol, ethanol extracts of molasses was determined using Folin-Ciocalteu reagent. The antioxidant capacity compared with standart antioxidants BHT, trolox, ascorbic acid. methanol and ethanol extracts of molasses, total phenolic compounds in the molasses extracts (methanol, ethanol) were determined as gallic acid equivalent (mg GAE/kg molasses). Values obtained of extracts were determined by content of 1 g molasses. All of molasses were contained excessively phenolic compound and excessively antioxidant activity capability.
