Investigation of possibilities of using lavender distillationsolid waste extract with chia (Salvia hispanica L.) seed mucillage asegg coating material

In order to minimize the weight loss of eggs during storage and to improve their shelf life, different edible films prepared from plant extracts have been investigated recently. In this thesis study, the possibilities of using lavender distillation solid waste extract together with chia seed mucilage as a coating material in improving the shelf life of eggs were revealed. For this purpose, weight loss (weekly and general; %) in Nick Brown hybrid hen eggs coated with materials prepared with the combination of chia seeds and lavender distillation solid waste extract in different amounts (0.75% and 1.5%) were evaluated on some internal egg quality parameters (yolk L, a, b values and albumen pH), some sensory properties (color, appearance, stickiness, brightness, odor), general appreciation and purchasing situations. For this purpose, daily (fresh) eggs were divided into 4 groups, each containing 35 eggs. The control (C) group was the group without any coating. Experimental groups (ÇT, ÇT+Eks1, and ÇT+Eks2) were coated with mucilage prepared from chia seeds only, chia seed mucilage and 0.75% lavender solid distillation waste extract, and coating materials prepared with a combination of chia seed mucilage and 1.5% lavender solid distillation waste extract by dipping method, respectively. Relevant parameters were evaluated after 4 weeks of storage. It was determined that there was a significant difference between the groups in terms of weight loss in all weeks except the 1st week (P>0.05). It was determined that egg weight loss was lower in all coating groups compared to the control in the 2nd week (P<0.05), 3rd week (P<0.001), and 4th weeks (P<0.001). Again, egg weight loss was lower in the coating groups (P<0.001). The coating materials did not affect egg albumen pH and yolk color L, a, b values, egg yolk TBARs and DPPH values, sensory properties, and general appreciation status (P>0.05). As a result, according to the findings obtained from the study, it can be said that egg coating solutions prepared with chia seed, chia seed mucilage-lavender distillation solid waste extract combination can be used to reduce weight loss of eggs during 4 weeks of storage without negatively affecting sensory properties. However, it is thought that it would be helpful to conduct studies with different ratios of coating materials in order to more clearly reveal the effects of lavender solid distillation waste, which is a waste.
