Abstract (EN)

In this study, drying which is one of the most important stages of the Cini production process has been investigated. Drying kinetics of raw materials of Cini which contains moisture about 30% have been examined experimentally in a convective dryer. Effects of drying temperature, relative humidity and velocity on drying kinetics and drying times for raw materials were examined. Molds whose dimensions are 10 cm x 10 cm x 1.2 cm, 10 cm x 10 cm x 1 cm and 10 cm x 10 cm x 0.5 cm were used in the experimental study. Three different experiments were done with these molds in order to determine effects of heat transfer on drying characteristics of drying of raw materials. First, mold, whose bottom and side surfaces were insulated, was used to investigate heat and mass transfer from top surface only. Second, bottom surface was made of stainless steel and side surfaces were insulated mold was used to determine heat transfer with conduction along with the convection. The last one was used to determine both heat transfer and mass transfer from top and bottom surfaces. Also, the effect of thickness on drying time of raw material was investigated using these molds. Experiments carried out at temperatures of 45 ° C, 50 ° C and 55 ° C, at relative humidity of 30%, 40% and 50%, and velocities of 1.5 m/s, 2.0 m/s, 2.5 m/s and 3.2 m/s. The data obtained from experimental studies has been compared with mathematical model in the literature. Also, diffusion coefficients have been determined according to data from experimental studies. In the last part of the study, simultaneous heat and mass transfer has been studied.
