In the past, people lived in villages and small towns, living their lives based on agriculture and animal husbandry. They were able to get their food from the vegetables and fruits they planted, and live without a constant effort to grow somewhere without any stress. They were nourishing naturally, living naturally, contributing to sustainability without realizing it. With the second movement that began to lay its foundations in Europe, the changes in the traditional rural life, on the basis of Agriculture and animal husbandry, began. With the Industrial Revolution, the people in the villages started to migrate to cities. With the Industrial Revolution, life began to gain speed. The foundations of societies that were rapidly producing and consuming, separating time into their work rather than themselves were laid. When we look at the present, people are constantly trying to catch up to something, they have jobs that are constantly confusing their minds. Speed is everything in this mess. It's important to be practical to make a profit from time. With this thought, many people break away from traditionalism. The traditional cuisine has been replaced by fast, practical, and unhealthy fast food, which can be eaten on foot. Thus, many people are trying to catch up to different hustle and bustle of their daily lives by reclaiming the time they spend cooking. This rapid living is against the current of the Cittaslow. Cittaslow flow; it is opposed to speed, preserves traditional cuisine, and advocates that it be enjoyed and enjoyed from life. In this thesis, the concept of Cittaslow was explained and its history and related concepts were mentioned. The concepts and details of Cittaslow have been presented and the criteria have been examined. In Turkey, towns that have been included in the Cittaslow network are briefly mentioned. Turkey's Cittaslow counties and district kitchens have been introduced with the main lines. In addition, based on the districts that have been included in the network in Turkey and within the scope of the criteria of the Cittaslow Han district of Eskisehir was examined. Han town was introduced in general terms and examined within the framework of the policies of Cittaslow. In this context, investigations have been made on Han's involvement in the Cittaslow network. The benefits of being involved in the Cittaslow Network and the basic elements that make up the kitchen of Han district are included. Interviews were conducted within the scope of thesis research.
