Abstract (EN)

This research carried out in Alaca, district of Çorum, in 2017-2018 aimed to determine the amount of some biochemicals in naturally grown barberry fruits and seeds. In this study, 20 barberry genotypes, having big fruit and high yield were determined and fruit samples were taken from selected types. The amount of phenolic acid, organic acid, vitamin A and E in fruits of selected genotypes; total oil (%) and some oil components in seeds were determined. The phenolic acid amounts of the genotypes examined were the highest and lowest Gallik acid 2,549-1,520 ppm, protokateşik acid 6.92-3.52 ppm, klorojenik acid 77.50-26.42 ppm, 4-Hidroksibenzoik 15.06-0.83 ppm, Vanillik acid 12.15-6.21 ppm, syrglic acid 4.71-2.07 ppm. The highest and lowest organic acid contents were okzalik acid 82.61-20.55 ppm, Tartarik acid 195.10-110.26 ppm, Malik acid 811.05-318.66 ppm, L-Askorbik acid 396.98-24.11 ppm, Malonik acid 31.59-9.89 ppm, and Sitrik acid 997.27-578,66 ppm. The highest and lowest amounts of vitamin A in barberry were determined as 3.02-0.22 IU / kg, and the amount of vitamin E was 776.86-39.19 IU / kg. The highest and the lowest amounts of oil components obtained from the seeds of barberry fruits were palmitic acid 19.32-10.83%, linoleic acid 85.35-19.46%, stearic acid 7.38-1.62%, palmitoleic acid 10.56-0.63%, arachidic acid 1.27-0.25%, oleic acid 43.68-0.86%, behenic acid 5.88-0.53%, linolenic acid 1.62-0.10%. The highest amount of oil obtained from the kernels of our types is between 9.66% and 4.37%. Based on the results of our studies, it has been shown that phenolic and organic acids, which are important for human health, have a rich content in vitamins and fat components.
