Abstract (EN)

In this study, it is aimed to determine some macro and microelement contents in wheat, red lentils, dry cowpea, dry bean, corn, chickpea, rice, green lentils, bulgur and oat products which are produced with organic methods in our country, which are easily accessible and organic product certificates. A total of 120 samples were examined. Organic certified cereals and pulses lead (Pb), cadmium (Cd), copper (Cu), nickel (Ni), zinc (Zn), chromium (Cr), mercury (Hg), iron (Fe), tin (Sn), Arsenic (As), aluminum (Al), manganese (Mn), cobalt (Co), sulfur (S), calcium (Ca), phosphorus (P), sodium (Na), potassium (K), manganese (Mg) element levels were measured. The results showed statistically significant differences (P <0,05) between organic certified cereals and pulses. Pb, Cr, Cd, Hg, As, Co elements were not detected in organic certified cereals and pulses. The other elements are 2.13-17.84 ppm Cu, 0.32-5.39 ppm Ni, 9.09-32.48 ppm Zn, 1.34-42.70 ppm Fe, 1.07-3.01 Sn, 0.39-7.42 ppm Al, 4.68-22.83 ppm Mn, 1147.4-2413.2 ppm S, 20.3-602.1 ppm Ca, 698.2-2854.8 ppm P, 4.66-26.50 ppm Na, 1494.4-9557.0 ppm K, 18.98-821.1 ppm Mg showed differences in the range.
