Reflections of the traditional culture of Diyarbakır in the home kitchen

The purpose of this study is to display Diyarbakır's traditional culture and it's reflection on domestic cuisine. The unit of this study is Diyarbakır's culture and local dishes. The data was derived from men and women living in Diyarbakır and it's districts. Each person was chosen from all the districts of Diyarbakır and the Diyarbakır city centre. All the interview were carried out by the researcher and answer were recorded with voice recorder. According to the findings of the study Diyarbakır has a culture which contains stew dishes predaminantly. Compared to the past, there has been no change in their dishes, but practicallity of the ingredients slightly effected the dishes. It is concluded that some dishes are cooked seldom or never at present. It is understood that there are slightly differences between centre and districts. Diyarbakır's dishes are introduced by staying loyal to recipes which has been given by notive people. Key words: Diyarbakır, cuisine, culture, dish, gastronomy.
