Historical progress of ice cream and it's intercultural comparison

The aim of this study is to investigate the discovery and the historical changes of ice cream as one of the gastronomic items. Hence, the data collection has been conducted via document review method. The study begins with the narratives on how ice cream was found and continues with its development and spread in the course of history. In addition, prominent ice creams from different countries are included and the types of freezing and ice cream in Turkish history are mentioned. The use of stored snow taken from the mountains in order to cool the food was effective in the discovery of ice cream. It has been seen that the ice cream emerged in Rome as a product made of fruit mash and snow, while the first ice cream in China was made of milk with sugar and ice. The transfer of ice cream over America was effective in its becoming an industrial product. Snow, being used in Turkish culture as a cooler for sherbets, was used in 19th century to produce ice cream. It is concluded that the journey of ice cream starting with sweetened snow turns into a milky sweet today, also while varying in different cultures, the ingredients differ depending on the region and the climate of that culture, moreover, with the emerging industrial developments traditional techniques are facing extinction.
