Abstract (EN)
In this thesis, the production of oleogels is aimed under consideration of the ratio of fatty acids recommended by the World Health Organization for a balanced fatty acid consumption. Oleogels were prepared by addition of beeswax (BW), carnauba wax (CW) and paraffin (P) oleogelators into 15% vegetable oil mixture (VOM). In addition, quality parameters of cookie formulations prepared by using oleogel samples, VOM and margarine were compared. It was determined that the highest solid fat index value was 0.39 ml / kg for paraffin oleogel (PO) at 35 ° C, this ratio was 0.24 ml / kg in margarine sample and it was 0.21 ml / kg in VOM. It was determined that the peak melting temperature of the margarine sample was 37.75 ° C and the closest value was 41.5 ° C for the PO sample, this value was 19.1 ° C for VOM. In the X-ray diffraction (XRD) plots of oleogel samples, although the occurrence of β' peaks were determined in all samples, they were determined in margarine to be more. The highest peroxide value of oleogel samples at 23 °C at the beginning and at the end of storage was 13.98 meqO2 / kg (carnauba oleogel, CO) and 28.3 meqO2 / kg (PO), respectively. Cookie samples remained oxidatively stable during storage (23 ° C). As a result of sensory analysis of cookies, the cookies containing beeswax (BC) were preferred for appearance and texture while cookies containing margarine (MC) were preferred considering their smell, taste and acceptability. Cookies (PC) containing paraffin were determined as the closest to the values that of MC regarding their odor, flavor and acceptability. It was determined that the hardness values of oleogel cookies were higher than that of margarine cookies. It has been determined that the oil holding capacities of oleogel cookies are higher than that of margarine cookies. This study showed that oleogels with balanced fatty acid content can be used as an alternative to margarines.
