Abstract (EN)

SUMMARY Algae Species Extracts with Economic Value of Biochemical Analysis and Measurement of Nutritional Value in Saccharomyces cerevisiae Culture In this study, the fatty acids, vitamins and phytosterol, flavonoid contents and antioxidant activities (ABTS, DPPH, total fenolic content) of algae species consumed as food (Corallina elongata, Sargassum vulgare, Jania rubens, Cystoseira barbata, Laurencia obtusa) were determined. Probiotic yeast extracts' the fatty acids, vitamins, sterol, protein, GSH and MDA prepared with these algae species were determined and compared. As well, biological effects of these algae on toluene and CCl4 against toxicity in yeast cells were researched. According to experimental results, the fatty acid contents Cystoseira barbata, Laurencia obtusa and vitamin and phytosterol contents of the algae were observed to be the highest levels on Corallina elongata, Laurencia obtusa, the flavonoid contents; in Corallina elongata. Acording to test results of in vitro, the increase was observed in in palmitic (16:0), and oleic (18:1, n-9) acids while toluene was added to the standard Saccharomyces cerevisiae culture. In cultures that use algae, obvious increases were determined in levels of myristic acid, stearic (18:0), palmitoleic (16:1, n-7), oleic (18:1, n-9), linoleic (18:2 n-6 ) acid, the total fatty acid USFA in Laurencia obtusa species (p<0.001). When CCl4 extract added to S. cerevisiae culture, the increase in the levels of some fatty acids, α-tocoferol, ergosterol and vitamin K were observed (p<0.05). In extracts of algae and algae extract with added yeast toxic substances in samples of ergosterol content increased in all groups compared with control group. In study the algae extracts have antioxidant activities in different ratios. Cystoseira barbata showed highest activity of DPPH (92.99±0.15%) and ABTS (99.80±0.21%) in 0.2 mg/mL. As a result, the some fiberious prebiotic algae were to be positive effects on the probiotic yeasts growth which used beneficial in terms of health, the probiotic yeast in the extracts of developing obtained from these algae were determined which effected to the fatty acid, vitamins in different ratio.
