In this study, it is aimed to reveal the relationship between different culturalization, cultural openness and food neophobia levels relating Georgian cuisine and with secondary data and statistical analyzes, explain the theoretical identity of ethnic identity, ethnic food, culturalization, cultural openness, food neophobia and ethnic food. In this context, a questionnaire was applied to 402 people who lived in Çarşamba, Terme and Salıpazarı in Samsun province and the person had at least once eaten a Georgian meal. Validity and reliability analyzes of the scales used in the study were performed. In the analysis of the obtained data, "percentage", "frequency", t test for independent samples, Anova "Tukey test (HSD) and" correlation "analyzes were used. As a result, the relationship between acculturation and attitude towards ethnic food was confirmed. Individuals who are more cultured and culturally open have expressed a positive opinion on Georgian cuisine. , The relationship between food neophobia scores of individuals and attitude towards ethnic food could not be confirmed. Although the participants exhibited a high food neophobia score, their views on Georgian cuisine were positive.
