Abstract (EN)

In analogous with the technological developments in the white appliance industry, time has become one of the most important features in the market. Appliances with rapid cooling, rapid heating, rapid cooking features are becoming more and more popular.With the aid of the market research that has been conducted all around the world, it can be seen that cooking appliances with shorter cooking times than conventional methods is a promising topic. In order to achieve shorter cooking times researchs and studies are focused on hybrid ovens which consist of different cooking tecniques like microwave, quartz lamps, conventional methods (static and turbo). In these kind of ovens cooking is achieved by the use of proper cooking algorithms.In the scope of this master thesis, cooking properties of different kinds of food with halogen lamps which radiate mostly in shorter wavelenghts is studied. The cooking characteristics of these lamps is explicated with the help of experimental and theoretical studies and the probability of using these kinds of lamps with conventional methods is introduced. With this object in mind technical literature and market research about shortwave kızıl ötesi lamps has been done and the applicaple types to cooking ovens is determined. Furthermore other components that would be essential in this design are; reflector for directing the kızıl ötesi radiation to cook the food homogeneously and effectively and a protecting glass layer with high kızıl ötesi transmission for protecting the kızıl ötesi halogen lamps from moisture, cooking oils dirt etc.
