Investigation of biogenic amine content of homemade tarhana and yogurt samples

Abstract (EN)

In this study; biogenic amines were analized total 90 samples in homemade tarhana, homemade yoğurt from Manisa region and chips tarhana (Kahramanmaraş tarhana). Samples of homemade tarhana, homemade yoğurt and chips tarhana were achived tyramine, cadeverine, histamine and putrescine analyzed by HPLC. Tyramine was the prevailing biogenic amines and putrescine, cadeverine and histamine were achieved different concentration. Total biogenic amine concentration of homemade tarhana samples were in the range from 0,09 to 15,96 mg/kg of homemade tarhana. Concentrations of biogenic amines were under the permissible limits all samples. Histamine and thramine were the prevalling biogenic amines in homemade yoğurt samples. Total biogenic amine concentration of homemade yoğurt samples were in the range from 0,15 to 20,15 mg/kg of homemade yoğurt. Concentrations of biogenic amines were detected under the permissible limits all samples. Chsips tarhana samples were had same results as homemade tarhana samples. The highest total biogenic amine concentration were achieved 3,51 mg/kg chips tarhana.
