The effect of different doses of chitosan coating and modified atmosphere packaging on Grand Nain storage and quality criteria

This study was carried out by C.U. It was carried out in the Post-harvest Physiology Laboratory of the Faculty of Agriculture, Department of Horticulture. In the master's thesis study, the effects of modified atmosphere packaging and combined application of chitosan + MAP at different doses on the preservation and quality of the Grand Nain banana cultivar were studied. After the banana fruits were peeled, 4 different applications were made as control group, MAP group, MAP + 1% chitosan and MAP + 1.5% chitosan application. Then, it was stored for 40 days in a cold storage at 13±1 ℃ and 95% relative humidity conditions. After each analysis, it was kept at 20 ℃ for 3 days under shelf life conditions. Weight loss (%), rotten fruit (%), skin color (hue angle), respiration rate (ml CO2 kg-1 h-1), fruit skin and flesh hardness (N), ), total soluble solid amount in bananas during storage and shelf life amount of substance (%), amount of titratable acid (%), pH, antioxidant capacity (%), L-ascorbic acid (vitamin C) (mg/100 ml), total amount of phenolic substance (mg gallic acid/L), fruit Physical and chemical analyzes such as sugar (%) and organic acid content (mg/L), appearance (1-5 scale) and air inside the MAP were performed. As a result of the physical and chemical analyzes carried out in the study; As a result of the comparison of banana fruits treated with different doses of chitosan (1% and 1.5%), it was determined that MAP + 1.5% chitosan application had positive effects on fruit quality parameters. It was determined that Grand Nain banana fruits, which were stored for 40 days both during storage and under shelf life conditions, had a positive effect on fruit quality criteria.
