Abstract (EN)

In this study, meat yields, proximate compositions and mineral matter (Na, C, K, Mg) contents of Rainbow trout (Oncorhynchus mykiss) obtained from Adana Kozan dam lake and concrete pools in Saimbeyli were examined. Mineral contents were measured by ICP-OES after wet burning. According to the results of rainbow trout meat yield and nutrient composition analysis; meat yield %57.4 -66.40, crude protein %16.99-19.93, crude fat % 3.07-4.18, crude ash % 0.98-1.58 and water % 75.10 It was determined in the range of 77.65. Mineral contents of Na, 19.53-36.04; Mg, 120.75-137.44; Ca, 2.66-30.58 and K were found in the range of 252.79-310,05 mg / kg. As a result of the study, it was found that the meat yield, proximate composition and mineral contents of rainbow trout vary depending on the location and size of the fish (p <0.05).
