Abstract (EN)

Since the first humans, societies have tried to meet their food and drink needs in order to survive. Today, all the studies carried out under this effort are expressed as gastronomy with its modern name. The history and culture of gastronomy has been examined and its stages from the first human to the present are mentioned. Gastronomy has also influenced the lives of people. It has kept people together and has become a culture. The history of spices also began almost at the same time as the history of gastronomy. Ancient people also used fragrant herbs for various purposes. Spices also developed over time, and even became the most important food item in the world during the medieval times. Thanks to the developing technology and transportation opportunities, spices have started to spread all over the world and societies have effectively benefited from spices in creating their own food cultures by using spices. The contribution of spices in the development of gastronomy is quite high. Spices carry the prepared food to a different dimension by giving identity to the prepared dishes. They add richness to the cuisine in terms of diversity by deriving the main ingredients used as basic raw materials. Mustard was first used as a spice in the world. The most precious spice of ancient times is black pepper. The use of spices in the kitchens not only gave the dishes an identity, but also enabled them to from in their national cuisines. Gastronomy, which has developed for centuries, is now a science. All local and academic studies carried out under the name of gastronomy are scientific. In order for all activities for gastronomy to be sustainable, the moves must be correct.
