Gaziantep's local food adapted for obesity and diabetes patients

Abstract (EN)
Gaziantep cuisine is a unique and distinctive cuisine. In order for diabetes and obesity patients to consume these unique tastes under portion control, baklava, rounding, lahmacun, dolma and beyran, which are among the local dishes of Gaziantep cuisine, have been adapted for diabetes and obesity patients. Healthy recipes adapted were inspected to panelists living in Gaziantep and knowing Gaziantep food, and double-triple test and paired comparison tests, which are among the sensory analysis methods, were applied. The data obtained were evaluated statistically by column chart and pie chart. As a result of the evaluation, lahmacun, rounded and baklava with 25% slice; Dolma stated that the difference was good with 13% and Beyran with 12%. All panelists understand that there is a difference in baklava. Baklava and lahmacunda mostly differ from the standard sample; Beyran, dolma and lahmacun were analyzed to be similar to the standard sample.
