Abstract (EN)

In this study, antioxidant activities, phenolic contents and element levels of ethanol extracts of samples collected from Gaziantep and Şanlıurfa provinces of Terfezia boudieri Chatin (Keme, Domalan) mushrooms, which were collected and consumed intensively from their natural environments in spring, were determined. In this context, TAS, TOS and OSI values were determined using Rel Assay Diagnostics kits (TAS, TOS). In addition, antioxidant activities were determined using DPPH method. Phenolic contents were determined using LC-MS/MS instrument. Element contents of mushroom samples were measured using atomic absorption spectrophotometer (AAS). As a result of the studies, it was determined that mushroom samples had high antioxidant activity. In addition, the samples collected from Şanlıurfa province had higher antioxidant activity. A total of 8 phenolic compounds were identified as catechin, acetohydroxamic acid, vanillic acid, resveratrol, fumaric acid, gallic acid, caffeic acid and butein. Element contents were generally in the literature ranges. As a result, it was determined that T. boudieri mushroom may be a natural source and an important antioxidant source for the identified compounds.
