Abstract (EN)
Artificial sweeteners, preservatives and dyes are rather widely added to foodstuffs, either to enhance their flavour and appearance or to extend their shelf-life by preventing biological degradation. Since several of these additives are prepared by chemical synthesis, their presence in foods is the cause of an extensive consumer's mistrust, in that they may exhibit adverse health effects. Among the commonly used additives, benzoic acid and its salts are widely used in beverage and food for preservation. Artificial sweeteners are widely used as sugar substitute in calorie-conscious societies, where their intake provides practically no calories and also helps fight obesity and its related ailments. In most countries, the use of additives is regulated. In some commercial products on the market by analyzing the methods to be developed with the WHO and the amount allowed by the Turkish Food Codex determinated whether they were within legal limits. Dietic soft drinks use calorie-free artificial sweeteners to replace sugar. For diet beverages, aspartame (asp), acesulfame-k (ace-K), are used as calorie-free substitute, for sugar. caffeine (caf) and sodium benzoate (SB) are two important ingredients in soft drinks. sodium benzoate is used to preserve the beverage by inhibiting the growth of yeasts, mold, and some bacteria. There is a need for analytical techniques to identify and quantify additives because the food industry is required to list the type and amount of each ingredient on product labels to help consumers make dietary choices and manage food allergies. This work presents the double divisor-ratio spectra derivative-zero crossing method used for the determination of Aspartame, Acesulfame- K, Caffeine, Sodium Benzoate, in dietic drinks. The proposed method based on the double divisor-ratio spectra derivative-zero crossing was proposed for the spectrophotometric multi component analysis of synthetic mixtures and cola drinks containing Aspartame and Acesulfame-K, Caffeine and Sodium Benzoate, in the presence of strongly overlapping signals without any chemical separation. The proposed method is based on the use of derivative signals of the ratio spectra by using double divisor. The proposed method was successfully applied to the simultaneous determination of asp, ace-K, caf and SB by using synthetic quaternary mixtures with different concentration ranges and cola drinks. The reliability of the method was further ascertained by recovery studies via standard addition procedure. Two simple spectrophotometric methods have also been proposed for simultaneous determination of three sweeteners (Acesulfame-K, Aspartame, Neohesperidine Dihydrochalcone) in synthetic mixtures and commercial soft drinks without any prior speration or purification. The method derivative spectrophotometry is based on recording the first for Ace-K, second for NDHC, third for Asp derivative curves and determining each component using the zero–crossing technique. Two separate methods for the determination of the spectrophotometric method was developed and the findings of these methods in terms of accuracy and precision with the help of t and F tests were compared with 95% confidence level, statistically evaluated and the methods applied. t value of the confidence level and three trial values of the table is small. Also F value of the confidence level and three trial values of the table is small. Validation studies carried out for all methods. The result of efficiency studies percent; %98,7±103. Each standard and sample standard deviation and relative standard deviation values were calculated. As indicated LOD and LOQ values, LOD values were between 0,16 µg/ml-0,81 µg/ml and LOQ values were between 0,54 µg/ml - 2,71 µg/ml. The methods have successfully applied to the determination of the four and three sweeteners in soft drinks and preserved beverages.
