Abstract (EN)

Feeding is the most important necessity for human beings to survive. Due to the social, cultural, economic and faith differences of societies, different culinary cultures were formed in the process. Turks coming from Central Asia to Anatolia have a rich culinary culture due to their long historical background and accumulation. For centuries, the Turks dominated Anatolia and formed the defining elements of Anatolian cuisine. When the Turks migrated from Central Asia, they took their traditions to the places they went. The Turks who came to Anatolia added their new food culture to their own eating habits.The lifestyle of a society reflects the nutritional culture of that society. Technological developments and the change of world standards have a significant impact on nutritional habits and culture. With the discovery of fire, the first cooking process began to emerge. The methods of cooking foods are increasingly developed and continue to develop. The aim of this study is a review of the Turkish culinary culture from Central Asia to the present and the cooking techniques used in this kitchen. In this study, the journey of cooking methods in time was examined and the process of conversion to the most used cooking techniques was also observed.
