The cuisine culture and the goods of this culture that were formed by societies with their traditions, customs, religious beliefs and value judgements were included in this study. It is inevitable that societies and cultures in Anatolia influence each other because of Anatolia's location among three continents. The acculturation among societies reflected their cuisine cultures. Kemah depended on Erzincan has had strategic importance on borderline even before Turkish domination. Kemah had always functioned as a borderline during the struggles among Muslim Arabians, Byzantine, Iran, and Turks. With this strategic importance Kemah is known as the city of flag almost in all periods in history.
