Transformation of traditional Malatya house kitchens on the basis of modernization process

One of the most basic needs of human life is the need to eat and drink. For this reason, special areas for eating and drinking have been considered in the places where they live and the concept of kitchen has emerged. Kitchen design has undergone changes in traditional Turkish cuisine over time due to reasons such as rapid population growth, modernization, opening of society to western cultures, rapid industrialization, urbanization, women's entry into working life, and the introduction of technology into our lives. Turkey's modernization process has made a great contribution to this change. In this process, traditional Turkish cuisine has evolved rapidly and moved away from Turkish culture. In this study, the historical development of kitchens is examined and how the concept of kitchen has evolved in the context of traditional Malatya houses with the beginning of the modernization process in the context of traditional Turkish cuisine is examined and evaluated by making on-site observations and determining with photographs. In order to comprehend this evolution well, the concept of kitchen within the spatial fiction of the traditional Turkish house, the difference of the Turkish house kitchen according to regions, the modernization process of the traditional Turkish house kitchen in Turkey within the development processes of the Turkish house kitchen are examined. How the evolution has developed and the contemporary transformations of the traditional Turkish house kitchens of Malatya region on the basis of users have been examined and observed on site. Two (2) of the kitchens of traditional Malatya houses, which are important and in current use, were examined on site in Arapgir district and identified with photographs. Another one (1) in Gündüzbey district was observed on site and identified with photographs. How and with which additions or transformations these kitchens are used in contemporary use has been exhibited. By examining the traditional kitchens, similar and differentiating features of the kitchens with their contemporary transformations were determined. Throughout the on-site investigations of the thesis, the features of modernization were constructed and defined.
