Abstract (EN)
The aim of this thesis is to understand the memorable street food experiences and the factors that affect the memories of these experiences with the embedded theory approach. The research process was carried out in accordance with the principles of the embedded theory within the framework of the qualitative research design. Data were collected through in-depth interviews with 25 people living in Istanbul and Didim. Data analysis was carried out using the NVivo 10 qualitative data analysis software program. Data analysis was done with open, axial and selective coding stages. As a result of coding, categories and themes were reached and a conceptual structure was tried to be presented. Two themes were reached under the main theme of memorable street food experience. The first theme is the factors that are effective in memorable street food experiences; taste, togetherness, smell, happiness, hygiene. The second theme is the effects of the memorable street food experience; positive effect and negative effect. Among these, it was concluded that the elements of taste, togetherness and happiness have a greater effect on memorable street food experiences compared to other elements.
