Abstract (EN)

'Hicaznar' pomegranate fruit arils after the granulation of three different concentrations of control (0mM), 2.5mM and 5mM oxalic acid (OA) with a 10 min dipping method after the applications of polivenilpropylene (PVPP) (250 g) packed in boxes at5 ° C in 90% relative humidity for 20 days. In order to determine the effect of OA application on quality changes of Hicaznar pomegranate fruit arils were determined at 4 day intervals including the first day of storage (day 0). The effect of OA applied Hicaznar pomegranate fruit arils on chilling injury damage was found to be statistically significant (p <0.05). However yeast and mold growth were not statistically significant and value were very closed to each other . Key Words: 'Hicaznar' pomegranate arils, oxalic acid, chilling injury, fungal decay
