Bulgur is one of the ready or semi-ready to eat cereals produced from wheat specifically Triticum durum variety. Residue of bulgur from manufactures are useless while, these wastes rich in some food components. Protein is one of the main components of bulgur that may remain in the wastes. This study was carried out to extract bioactive peptides from the bulgur waste samples and indicate the activity against oxidation stress, microbial inhibition and hypertension control. The analysis made in this study were determination of protein, fat, ash and moisture content, extracting protein from the bulgur wastes, the samples hydrolyses by four diverse enzymes including pepsin, trypsin, chymotrypsin and protease in a suitable incubation conditions for entire 360 minutes. Effect of concentration, time and different types of enzyme has been investigated on each activity. The extracted protein content by alkaline processes was determined as 2.84% (w.b) by kjeldahl method. The hydrolysis rate, antioxidant activity, antimicrobial activity and antihypertensive activity show either an increases or decreases according to the incubation conditions. This study illustrate the extracting of protein content by alkaline processes and hydrolysis by four diverse enzymes and proofing the anti-oxidant, antimicrobial and antihypertensive activity of the accessible bioactive peptides in the bulgur waste samples.
