Food additives; They are used to give food durability, density and color during the production, preparation, packaging and storage of foods. Aspartame is 200 times sweeter than sucrose and the sweetness it imparts to food; Since it provides only 5% of the calorie content, this feature has made it a more unique and popular sweetener. Aspartame can turn into a carcinogen and neurotoxin when it enters the body. Vitamin D; It is a fat-soluble vitamin that is stored in the body for a long time. In addition, it is a hormone and hormone precursor sterol structure that can be synthesized endogenously in favorable biological environments. In this study, antioxidant enzyme activities of aspartame and vitamin D [superoxide dismutase (SOD), catalase (CAT), glutathione-S-transferase (GST), glutathione peroxidase (GPx)], glutathione reductase (GR), malondialdehyde on human blood cells in vitro conditions were investigated. (MDA), glutathione (GSH) level and acetylcholinesterase (AChE) activities, as well as osmotic fragility, DNA fragmentation, viability determination, Raman spectroscopy, one of the vibration spectroscopic methods, and the effects of aspartame and vitamin D on erythrocyte and leukocyte cells were also investigated. In the aspartame-treated group, AChE and antioxidant enzyme activities, GSH level and vitality percentage decreased statistically; It was observed that DNA fragmentation, MDA level and osmotic fragility values increased. In addition, it was observed that there was a protective effect against aspartame in the group administered vitamin D together with aspartame. As a result, it has been revealed that aspartame has a toxic effect on human blood cells, while vitamin D has protective effects.
