In this study, proximate compositions and amino acid contents of peregrine shrimp (Metapenaeus stebbingi Nobili, 1904), sand crab (Portunus segnis Forskal, 1775), european squid (Loligo vulgaris Lamarck, 1798), red mullet (Mullus barbatus Linnaeus, 1758) and lizardfish (Saurida lessepsianus Russell, Golani & Tikochinski, 2015) caught from Iskenderun Bay were aimed to determine. In the evaluations in terms of proximate compositions, the moisture levels of the species used in the study varied between 71 and 81%, crude protein levels varied between 14.81% and 22.44%, lipid levels varied between 1.31% and 4.65%, and crude ash levels varied between 1.19% and 2.62%. 16 amino acids were identified from the species used in the study. Nine of them are essential amino acids as histidine, arginine, threonine, valine, methionine, leucine, isoleucine and lysine. The other six are non-essential amino acids as aspartic acid, glutamic acid, serine, glycine, alanine, proline and tyrosine. Differences were detected between species in amino acid levels and it was determined that in general, the amino acid levels of peregrine shrimp and lizardfish were higher than the others.
