Abstract (EN)

Seaproducts which have high importance for people diet and health become the situation of the menace to people health as a result of developments of rapid urbanization, tourism, industry and technology. Heavy metals and microbiological pollution come the head of these hazards. In this research the effects of these pollutions of some fish species which are sold in İzmir Fish Market on the food safety and food quality is searched.Microbiology analyzes including total mesophile aerobe bacteria load, total psychrotrophic bacteria load, total coliform and fecal coliform bacteria analyzes, Escherichia coli, Salmonella spp, Staphylococcus aureus analyzes were done at gray mullet (Mugil cephalus L., 1758), sardine (Sardina pilchardus W. 1792), perch (Dicentrarchus labrax L., 1758), gilt-head bream (Sparus aurata L., 1758) which were caught offshore (Aegean Sea) and bay (İzmir Bay) provided İzmir Fish Market and perch (Dicentrarchus labrax L., 1758), gilt-head bream (Sparus aurata L., 1758) which were caught two different fish farms provided İzmir Fish Market. After fish samples were burned in the microwave oven; lead, cadmium, arsenic and mercury analyzes were done by using atomic absorption spectrophotometer for heavy metal analyzes. Additionally for determining chemical composition of fish samples; pH, moisture, ash, lipid and protein analyzes were performed.Total mesophile aerobe bacteria load was found at fish species were caught offshore 2,48±0,25-2,77±0,66 log kob/g, at fish species were caught bay 2,36±0,02-3,01±0,86 log kob/g, at fish species were caught fish farms 2,09±0,12-3,07±0,32 log kob/g. Total psychrotrophic bacteria load, total coliform and fecal coliform bacteria, Escherichia coli, Salmonella spp, Staphylococcus aureus were not detected at any of the fish samples. As a result of heavy metal analyzes; Pb concentration was found T.E-0,14±0,07 µg/g, Cd concentration was found T.E-0,06±0,02 µg/g, Hg concentration was found 0,04±0,03-0,32±0,08 µg/g and As was not detected (<0,1 µg/g) at fish species which were caught offshore, Pb (<0,08 µg/g) and As (<0,1 µg/g) were not detected, Cd concentration was found T.E-0,06±0,03 µg/g, Hg concentration was found 0,02±0,00-0,145±0,08 µg/g at fish species which caught bay. Pb concentration was found T.E-0,15±0,14 µg/g, Cd concentration was found T.E-0,04±0,03 µg/g, Hg concentration was found 0,03±0,01-0,47±0,6 µg/g and As was not detected (<0,1 µg/g) at fish species which were caught fish farms. According to the results; analyzes of fish species which are sold in İzmir Fish Market involve any risk with regard to food safety within microbiology and heavy metals and the research shows that fishes which have been analyzed are important source of nutrition with regard to involving significant nutrients for human such as proteins and lipits.
