From the past to the present, the use of medicinal and aromatic plants has become widespread for cosmetic and therapeutic purposes. It is aimed to maximize the active ingredients in the plants by adding solvents by adhering to traditional methods. These extracted factors are in a solution with solvents. This solution was encapsulated and pulverised with the spray dryer device by encapsulating the maltodextrin around the active ingredient, and after homogenous mixing with vitamin additives, the process ended with filling into capsules. The final product obtained allows encapsulation of the active ingredient of black elderberry and can be used as a food supplement. The subject of the thesis is the development of food supplement products in powder or capsule form by encapsulation method. By using this method, powder or capsule products from some plant extracts, especially rosemary, are currently being studied. With this subject, trial studies of capsule or powdered food supplement products consisting of both themselves and mixtures of black elderberry, which is still not available in capsule form, were carried out.
