ABSTRACT EFFECTS OF CARRAGEENAN, XANTHAN AND LOCUST BEAN GUM'S WHICH IS USED FOR THE PRODUCTION OF THE CAROB SYRUP CONTAINING ICE CREAMS ON THE QUALITY OF ICE CREAMS Abdullah BADEM M. Sc. Thesis in Food Engineering May 2006, 73 pages In this work, the effect of stabilizers used for carob pekmez-ice cream in different ratios was investigated on physical and chemical properties of the ice cream. For this reason, different amount of kapa-carrageenan (0.0-0.2%), xanthan (0.0-0.2%), and locust bean gum (0.0-0.6%) were used in mixes as stabilizers. The mixes were processed to the ice creams and the products were evaluated in chemical, physical and sensorial properties. Moreover, the ice creams were stored in deep freeze up to 1 month and texture properties of them were measured throughout the storage. According to sensorial analysis, the ice creams of 0,1% carrageenan, 0,1% xanthan and 0,4% locust bean gum were preferred.
