Some physical and chemical properties of chicken breast meat marinated with coriander and garlic oleoresins

Abstract (EN)

In the current study some physical and chemical properties chicken breast meats marineted with varous ratios of coriander, garlic oleoresins or the mixtures of coriander+garlic oleoresins during cold storage. Fort his purpose seven different marinates were prepared and named as Control (without oleoresin), 0.5KI (0.5% coriander), 1KI (1% coriander), 0.5SA (0.5% garlic), 1SA (1% garlic), 0.25KISA (0.25% coriander + 0.25% garlic). Following the marinating process, all groups were kept in refrigerator at + 4°C. The pH, titration acidity (TA), color (CIE L*a*b*), water activity (aw), thiobarbituric acid (TBA), peroxide, cooking loss and weight loss values of all groups were analyzed on the days of 0, 7, 14 and 21. In addition, marinate absorption rates and the contents of moisture, fat, protein, ash and salt were determined in all marinated groups. It was determined that the highest moisture, fat, protein, ash and salt contents were measured from the groups of 0.5SA, 0.5KI, 0.25KISA, Control/1KI, and 0.5KI, respectively (p<0.05). It was seen that 0.5KI had the highest marinate pH value while 0.25KISA had the highest marinate absorbtion ratio (p<0.05). It was determined that 1SA had the the highest TA value at the beginning of storage while 1SA, 0.5SA and 1KI had the highest TA value at the end of storage (p<0.05). The marination process and storage periods had no significant effect on the aw values of marinated chicken meat (p>0.05). It was determined that the lowest TBA value were measured from 0.5KISA while 0.5SA had the lowest peroxide value at the end of the storage. The data of the current study showed that marination with oleoresins especially with the 0.5KI, 0.5SA and 0.25KISA marinates could have some benefits on the quality parameters of the marinated chicken meat products.
