Decontamination of Salmonella typhimurium in broiler carcasses with chitosan

Özet (EN)

The main purpose of this study was to investigate the decontamination of Salmonella Typhimurium by using chitosan in broiler carcasses. The study consisted of 8 groups, including also negative control group. Before contamination all groups were tested for the presence of Salmonella spp. except for the negative control group, S. Typhimurium strains were inoculated at 108 cfu/ ml in each group. Afterwards all the contaminated groups except the positive control were decontaminated by being treated with %1 lactic acid, %2 lactic acid, %0,1 chitosan, %0,05 chitosan, %0,05 chitosan- %1 lactic acid combination and %0,01 chitosan- %1 lactic acid combination for 5, 10, 15 min. Microbiological follow-up of the prepared samples was ensured on the 0th, 3rd and 7th days of storage. Research showed that %1 lactic acid, %2 lactic acid, %0,05 chitosan- %1 lactic acid and %0,01 chitosan- %1 lactic acid solutions were found to have antimicrobial effect on S. Typhimurium (p<0,05). In terms of the applied timethere was no difference between the study groups (p> 0,05).
