Due to the use of natural pigments for the manufacture of the natural dyeings, the natural dyeings are more pleasing and have a peaceful effect on people. Besides these dyeings reduce the environmental pollution and don?t damage people health. The tourists have more interests to the natural dyed products, once again expose the importance of the natural dyeing for our country's foreing currency input. The natural dyeings are made by using the natural dyestuff in nature. Research conducted in recent years, first put out the negative effects of artificial coloring substances on human health, then the interest in natural color agents is increasing day by day. In addition, in some studies, anthocyanins have revealed that many positive effects on human health. Anthocyanins, the antioxidant potential of medicinal products for food products, and also has a growing interest in natural food dyes. Anthocyanins, a bright red color of foods, and many foods dyeing that are considered as an important alternative to synthetic dyes. The knowledge of literature, anthocyanin extracts, foods not gain only features attractive color, but also because of the high antioxidant capacity of the compounds showed very beneficial for health. Nowadays, a variety of natural dyes in which antioxidant, anti-bacterial, anti-microbial and so on. activities, and some synthetic colorants light of day since the advent of negative effects on human health have become the focus of attention. Anthocyanins are the most important commercial natural pigments. Anthocyanins, which are derived from the leaves of red roses and natural dyes, there are many fruits and vegetables. Anthocyanins, gives color to fruits such as strawberry, grapes, cherries, cherry (red, purple, pink, blue) is also found in the roots of various flowers and plants, the best natural colorants. Anthocyanins colors, they are based on the molecular structure and the pH value of the medium. In this study, we were obtained natural dyestuff with different extraction methods and red rose was chosen as pigment source. The optimum conditions will be searched for obtaining of maximum yield and colouring force and stability of the colouring substance in the case of using of anthocyanins. For the quantitative determination of anthocyanins which were obtained from extraction process, absorption, derivative spectroscopy, differential spectroscopic methods and the pH differential methods was developed and validation process was applied separately for each method. Some parameters as effect of the pressure on the effect of solvent and the time of extraction will be examined for the extraction methods which are used by increasing of the extraction yield and minimizing of the amount of colouring materials and the extraction of dye economically in the short time and in this study, ethanol / 0.1 N HCl (90/10, v / v) solvent mixture was used as a solvent, solid / liquid ratio of 1/40 and the extraction time was selected as 10 minutes. The resistance of colouring materials which have been in foods will be examined on the heat, the radiation of UV, pH and the effect of the air oxygen. It was found that pigments resistanted to heat, UV light and the air oxygen, they are susceptibility to reducing and oxidizing agents but after the completion of the volume of the solvent mixture was returned to the old colors. These study showed that, dyestuff was quite stable in solvent mixture used in the study. In this research, natural dyes derived from the leaves of red roses and various metal salts are used as a mordan material, was applied to the wool fabrics according to ten different dyeing methods, by means of tampon solution prepared pH:4, at 100°C, at the closed system. Tannic acid, which is used as a wool dyeing because of its light washing fastness and properties of antibacterial and antiviral behaviours like that removing marggot-larva and other allergic materials, was approved in our study. The dyed wool fabrics were determined color codes, color differences and reflectance values. The dyed fabrics were performed light, rubbing and perspiration fastness tests. Antibacterial properties tannic acid and AgNO3 whether it was checked and Method 1 ve Method 2 were found to be in the antibacterial property. According to the light fastness tests, it was obtained rarely 4, a few test gave 7-8 and average results were 4-6. These results were obtained as good according to the natural dyeing at the literature researches. It was observed that the results test of the rubbing fastness were between 4-5 in the dyeing by the whole other mordan salts except FeCl3.6H2O, FeSO4.7H2O and AgNO3 mordan salts and this result was very ideal for floor materials ( carpet and rug), the area which they were mostly applied. FeCl3.6H2O, FeSO4.7H2O and AgNO3 mordan salts showed the rubbing fastness test result between 3 and 4 in the dyeing process. All mordant dyeing with salt, perspiration fastness test results, usually between 4-5 rarely 5, and these results were obtained as good according to the natural dyeing at the literature researches.
