Prof. Dr. Abdullah ÖKSÜZIn this study, some heavy metals and minerals have been determined in liver, muscle tissues and food contents of the some pelagic and demersal fish which arefishing and heavily consumed in the region of Northeastern Mediterranean(Adana/Karatas ) during September 2003, December 2003, March 2004 and May2004. Pelagic fishes: Etrumeus teres, Scomber japonicus, Liza aurata, Trachurusmediterraneus; demersal fishes: Sparus aurata, Merluccius merluccius,Chelidonichthys lucernus, Saurida undosquamis, Solea solea, Upeneus molluccensis.Crude protein analysis was conducted and determined with respect to AOAC(1984); lipid analysis was conducted according to Bligh and Dyer (1959); moistureand ash analysis were conducted with respect to AOAC (1990).Mineral subtance and heavy metal content measurement were done by firstwet burning and then by using ICP-AES.According to the results of the study it was determined that food compositionmineral substance and heavy metal contents were varying depending on fishingseason and fish species. It was found that the metal levels found in tissues of demersal fish werehigher than the levels found in tissues of pelagic fish.In addition to those results, it was found that metal levels found in muscletissues are relatively lower than found in liver tissues and levels found during thestudy do not exceed the consummability limits.Key Words: Northeastern Mediterranean Fishes, Food Composition, Minerals,Heavy Metals
