Abstract (EN)
Walnuts and apricots grown in Malatya are rich in oil, protein, vitamins and minerals. Walnuts from Hekimhan and Doğanşehir districts and apricot kernels collected from Battalgazi district were analyzed. Saturated and unsaturated fatty acids such as palmitic acid, oleic acid, linoleic acid, α-linolenic acid, stearic acid were analyzed by GC-MS. Qualitative analyzes of organic and inorganic substances in walnut and apricot kernels were performed with FT-IR. In the element scan performed in SEM-EDX, 96% C and O were found on average, while 5% Mg, P, Al, K, S, Ca were found. Elemental analysis was performed in AAS and ICP-MS by solubilization by microwave extraction method. Zn, Mg, Se, Cu element levels were measured with AAS. With ICP-MS, macro elements Na, K, Ca, Fe and heavy metal levels Mn, Co, Al, Ni, Ag, Pb, which have toxic effects even at low concentrations, were measured. The results of the analysis of the products of the year 2021 and 2022 were compared. It was observed that there was no change in the chemical structure of walnut and apricot kernels if they were kept in shell. According to the analysis results, in walnut and apricot kernels; It was determined that fatty acids, which are responsible for different functions in the human body and give high energy to the body, are esters, contain elements that are important in living biochemistry, and do not contain heavy metals.
