Abstract (EN)
Plants have been used as medicine for thousands of years, even todays they are accepted as a source of treatment against different kind of illness (Rehman vd., 2015). It is well known knowledge that phenolic compounds that are the largest family of secondary metabolites are good antioxidants by blocking oxidation in cell and physiological levels. Moreover, phenolic compounds show anti-cancer, anti-inflammatory, anti-microbial etc. activity in wide range (Oh et al., 2015, Larson, 1988; Cuvrelier et al., 1992). Merkez Efendi is the first man come to mind when Mesir paste is spoken because he made an herbal paste with 41 plants in order to cure Ayşe Hafsa Sultan. Up to now, there are difference studies on Mesir paste, and a part of these studies on its chemical properties such as invert sugar, acidity (Artık et al., 1993) humidity, volatile contents, 5-HMF, pH, ash content, refractive index, soluble brick materials (Oskay et al., 2010) were investigated. Other parts of these studies are focused on its rheological properties and biological activity (Güven N., 2010). In this thesis, herbal mixture has been prepared according to the historical and geographically indicated Mesir paste then these mixtures were extracted with different solvent in different polarity. Total phenolic and flavonoids contents of obtained extracts were examined and also their antioxidant capacities will be investigated by different methods including chemical and biological methods. The phenolic compounds in extract were determined as apigenin 7-glucoside, gallic acid, hesperidin, rosmarinic acid, vanillin, verbascoside. The most active extract for DPPH and ABTS activities was CİMM EtOH:water extract with 49.39% and 73.41% inhibition values.
