Abstract (EN)

Objective: The aim of this study is to comparatively examine the chemical composition, fatty acid profile, and color parameters of haploid and diploid eggs of rainbow trout (Oncorhynchus mykiss), which were obtained from different production stations and fed with feeds of varying compositions. Material and Methods: This study was carried out in two different trout production farms located in Fethiye district of Muğla. In both stations, haploid and diploid eggs obtained from 4-year-old female and 3-year-old male rainbow trout (Oncorhynchus mykiss) broodstocks raised under culture conditions were used. The basic chemical composition, fatty acid profile and color parameters of the eggs were determined. Results: While diploid eggs at station 1 had the highest saturated fatty acid (SFA) and monounsaturated fatty acid (MUFA) levels, diploid eggs at station 2 reached the highest polyunsaturated fatty acid (PUFA) content (p<0.05). In addition, EPA/DHA ratio was found to be higher at station 1 (p<0.05). Significant differences were also found between stations in atherogenic (AI) and thrombogenic index (TI) values (p<0.05). A significant difference was detected among the color parameters of the eggs (p<0.05). Conclusion: The fatty acid composition of rainbow trout eggs was found to be sufficient for embryonic development and indicated their potential as a food source for human nutrition.
