Abstract (EN)

Oxygen free radicals in the body are created continuously and cell damage can be prevented with eliminating.by antioxidant mechanisms. If these reactions occur in favor of free oxygen radicals lead to cell damage, this event is called "oxidative stress". In this study, it is aimed to determine the amount of antioxidant of stum that had formed on top of the leaves of pedunculate oak (Quercus robur subsp. pedunculiflora) in Muş and Bitlis province, deformation on leaves or secreted by the plant to protect itself, nutritional and therapeutic. This stum is called gezo molasses among the people. Extract was obtained from the acorn of this tree, acorn-house, leaves, and fruit juice (gezo syrup) in alcohol and water.These extracts were derived from BHA, BHT and antioxidants such as ascorbic acid, ABTS, DPPH, looking at the ratio at different concentrations according to the methods of ferric thiocyanate, examined at spektofotometer and reported.It is aimed to determine ratio of the total antioxidant capacity and basic compounds contained in the plant, which has antioxidant properties.
