In this research, the effects of different heights (1300 m and 1500 m) that were grown in Niğde, the storage time and quality changes of the Scarlet Spur grown apple varieties are determined. Fruits were stored at 1±1oC temperature and 90% relative humidity conditions for six month. Whole fruits were kept at 20oC temperature and 65% relative humidity conditions for 7 days as shelf life. Physical and chemical changes such as weight loss (%), respiratory rate, ethylene production, fruit firmness, starch breakdown, soluble solids content (%), titratable acid content (%), pH, decay incidence fruit content (%) , fruit peel color (hº), fruit sugar and the organic acid content were determined during storage and shelf life by periodic analysis. Research in apple varieties of Scarlet Spur grown in the altitude of 1500 m storage and the shelf life of apples compared to apples grown in the altitude of 1300 m was found to be better quality changes.
