Abstract (EN)

Within the scope of this thesis, an edible film was produced by adding the extracts obtained from the edible Amanita caesarea (AC) and Boletus reticulatus (BR) macrofungi, collected from the borders of Zorkun, Karıncalı highland of Osmaniye province, in different ratios (25, 50 and 100 mg) to the structure of the film and various physical and chemical properties of the films were investigated. It was determined that AC mushroom had higher total phenolic content than BR mushroom. It was determined that all films containing AC extract were of lower thickness than the control, and only the BR100 film was thicker. When the moisture contents were compared, it was determined that the moisture contents of all films obtained by adding both mushroom extracts were lower than the control film. It was observed that the solubility in water decreased at low fungal concentrations and increased at higher concentrations. The L* value, which expresses the whiteness and blackness value, was determined the highest in the control film, while the lowest was determined in the AC100 film sample. From this, it is understood that the control film is more transparent. The opacity values of the films obtained with the addition of mushroom extract containing bioactive components were increased. It was found that the UV barrier properties of the films produced by adding mushroom extract were higher than the control film.
