Abstract (EN)
Hotels in the service industry have a significant place in both national and international economy. At the same time, job satisfaction and turnover rate perception level of the employees employed in the hotel management sector, which shows labor intensive properties, have an important role for hotels to reach their goals. Especially in the hotel management sector, the employees determine the quality of service that is given to customers. In addition, today's customers expect a high quality service no matter what the content of the service is. When the possibility of competing with its opponents and increasing the profitability of a hotel whose customers are highly contented is considered, employees' importance for the hotels is understood. On the other hand, to keep employees' perception level of turnover rate at the lowest level by increasing their job satisfaction is one of the main strategies of hotel managers expecting to provide a competitive advantage. The aim of this study is to find employees' perception level of turnover rate by determining job satisfaction level of employees working in the food and beverage units of 4 and 5 star hotels in Gaziantep. On the other hand, whether there is a relation between the aspects that form job satisfaction and turnover rate perception is another aim of this study. This research was conducted by applying a survey to 272 employees working in the food and beverage units of 17 different 4 and 5 star hotels in Gaziantep in May and June in 2015. The survey's result was analyzed and standard deviation and arithmetic average of it was calculated and factor analysis was used for data binning. Also, within the scope of research, with the aim of being able to test hypothesizes "Kruskal Wallis H Test" and Mann-Whitney U Test" were applied by taking into consideration the fact that the data didn't show normal distribution. As a result of the research it has been seen that while the job satisfaction of employees working in the food and beverage units of the hotels consists of three aspects including "career and workplace environment" "motivation" and "objectivity", the aspects that form employees' perception of turnover rate also consist of three aspects including "working conditions" "managerial factors" and "feeling of confidence". In addition, the job satisfaction of employees working in the food and beverages units of hotel is found to be high while their perception of turnover rate is medium-level. Correlation analysis result has shown that there is a meaningful statistical relation between some aspects that form the job satisfaction and turnover rate perception of employees working in the food and beverages units of hotels.
