Decontamination of salmonella typhimurium in broiler carcasses with ozone, sodium hypochlorite, levulinic acid and lactic acid

S. Typhimurium is one of the most isolated bacteria in poultry meat which has an important place in food poisoning. In our study, S. Typhimurium decontamination was investigated in broiler carcasses using ozone, lactic acid, sodium hypochlorite and different concentrations of levulinic acid. The study consisted of 8 groups, including also negative controls groups. Before contamination all groups were tested for the presence of Salmonella spp. Expect for the negative controls groups, S. Typhimurium strains were inoculated at 108 cfu/ml in each group. Afterwards all the decontaminated by being treated with 1,5 ppm ozone, 2% lactic acid, 30 ppm sodium hypochlorite, 2% levulinic acid, 2,5% levulinic acid and 3% levulinic acid for 5, 10, 15 min. Microbiological follow-up of the prepared samples was ensured on the 0th, 3rd and 7th days of storage. In the study, a statistically significant relationship was found in terms of the number of bacteria according to the duration in the group categories contaminated with S. Typhimurium (p <0,05). Each decontamination group was found to be effective in inactivation of S. Typhimirium compared to the control group. 1,5 ppm ozone between, 5 min and 15 min applications within the group and other chemical decontaminant applications was observed a significant difference (p <0,05). However, other chemical decontaminants applications in itself and other groups are likely to differ significantly between not detected statistically (p > 0,05). Among the decontamination solutions we used, the most effective chemical solution was found to be 3% levulinic acid. The effect of ozone solution application on S. Typhimirium produced lower logarithmic decrease compared to other groups. Keywords: Broiler carcass, Decontamination, Levulinic acid, Ozone, Salmonella Typhimurium
