Investigation stability of red beet color extract

In this research was investigated, one and two-half brixes of betanin were extracted from beetroot in order to determine stability of betanin at different temperature related with time under led light. For this purposes the samples were replaced in 500 ml glass bottle and stored between 10- 30 ˚C under led light at 3W and color changes related with time(day) for each sample was analysed by spectrophotometer high performance liquid chromatography (HPLC) . Stability of betanin (one brix) related with reaction rate (k) were determined as 0,6648, 0,349, 0,0058, 0,0232 day-1 at 30, 25 , 20 and 10˚C respectively. Also degradation of betanin for two-half brix was estimated allied 0,287, 0,1238, 0,0544 day-1 in recpect to 30, 20 and 10˚C . Acccording to that kinetic degradations were followed a first order and the activation energy was estimated as 29,09 and 15,064 and kcal /mol for one and two-half brixes. The result was indicated that degradation of betanin at higher concentration was faster then light concentration and also color losses 28 times higher when storing one brix at 30˚C then 10˚C. In addition to this investigation degradition of the betanin 5,6 times higher at 30˚C then 10˚C. Keywords: beetroot, betanin, reaction rate constant
